Especially given your location, I would recommend going with a sit-on-top. I like Perception kayaks the best.
Sit On Top Kayaks - Perception Kayaks In general, their boats are faster than most, while a touch less stable. (very little danger of dumping yourself out, just can't stand and fish on them)
I would recommend gettnig one in the 13-16' range, as they track much more straightly, making them still faster.
