Based on where you will stay, you have a couple of options. If you go to South Beach Marina, you can hire a boat or you can rent a kayak. Outside Hilton Head will rent them and there are some real nice places within a couple hundred yards of South Beach. Lots of reds and trout. If you can go to the Sea Pines office and get a fishing pass(free) and there are a lot of lagoons within walking distance and you will catch some nice reds. I will try to get some maps and more information for you later this week. I go fishing just about every night in Sea Pines. I will get back to you and if you think of anything else let me know.
