We have been cutting back the soy sauce and salt while staying the course with the sugar. You can substitute brown sugar if you wish. We are adding more of the white wine to cover the volume loss from the soy. Overall the adjustments are making a better finished product, less salty and better taste all round.

I would recommend test batch's in order to get the balance you want.
