The Schminnow is as easy as it gets:
Hook: Any O'Shaughnessy bend, straight eye SS hook - my go-to is a size 1 1x shank
Eyes: Black Bead Chain (some use mono, but I find that after a few fish I have a one-eyed fly as they tend to break off)
Thread: White Flat Waxed
Tail: Marabou same length as hook shank
Body: Pearl Estaz
Tie in the eyes; wrap thread to the bend; tie in the marabou (some tiers clip the tips, I don't); tie in your estaz; wrap thread to the front of the eyes; do the same with the estaz, whip finish and you're done. Too easy.
