We have guy over here, who loves to eat the chubs. But he perpares something like a fish burger from the meat and I can tell you that these burgers are fantastic. Here I will try to explain the recipe:
1. Cut the filets and sprinkle them with fresh lemmon juice. Then pack them for a while into the fridge.
2. Grind the filets together with some pieces of bacon, onion, white bread and parsley.
3. Mix this mass with egg, salt, pepper and maybe some flour so that it becomes a little bit sticky.
4. Form some meatballs (flat disks => diam. 3", thickness aprox. 1") and fry them in butter in a pan.
Hope you will get an idea about the recipe, I did it just one time, but it was really unexpected good
