Where in the central valley are you? I'm just inland from Auburn on the 80 about halfway between Sacramento and Lake Tahoe. In this area we have:

In the valley: The Sacramento river where I've heard there are salmon this time of year.

Further up the hill there's the north, middle and south forks of the American River.

The Bear river is suppose to have some small browns in it and it's only 2 miles from my house

The Yuba River has some incredible trout fishing. Just follow highway 49 past Grass Valley and Nevada City and the road runs right next to the river. I just picked up a local guide book a few weeks ago that list a lot of the best spots on the Yuba.

The Truckee River runs right next to Highway 80 and is suppose to be very good.

There is a fly fishing store in Rocklin, just east of Sacramento called Fly Fishing Specialties. http://www.flyfishingspecialties.com/ They have classes and guided days out. Their beginner class (Basic casting and so on) is held in a park on the 2nd Saturday of every month and is only $50. My wife and I are going to try to take the February class together. They then have full day guided intermediate classes on the river throughout the year at several of the rivers I listed above. You may want to look into that basic class as well.
