Fishing in Late Fall/Winter

Being a newcomer to this fly fishing addiction, I have some questions about fishing this time of year (late fall/winter). As it gets colder do you pretty much give up on bass and sunfish (ie. warmwater species) and concentrate on trout or does it stay warm enough here in Texas to pursue bass, etc... year round? What are you fishing for at this time of year? I have read some reports on stripers and sand bass. What are the seasons on these fish? I am definitely going to fish the Guadalupe for trout over the next 3-4 months and will probably even go to Broken Bow a time or 2 for trout. Just wondering what my other options might be.
