As far as knives. I always have my Meyerco in my pocket. My son gave me one of these a few years back. What a great knife.Cutco-World's Finest Cutlery I carry this in all my tackle bags. At home I use the Dexter 7" Fillet and a 12" fish splitter, basically a wide blade boning knife.

I carry the Letherman Skeletool. Simple locking blade, nice pliers and a cap lifter... All I need for fishing.

I carry a Coleman-Western lock-back folder with 2 1/4" blades. One is plain the other serrated. It is stainless steel with some kind of durable synthetic sides. I have carried this for about 30 years and used for hunting, farming, household chores, hiking, everything a knife can be handy for. The serrated blade cuts small sapling very well and is great for cutting rope. It saved more than one cow for me.
BTW, I wanted to attach a picture but, being new here, I cannot find an attachment tool. Yes, there is a tool for putting up links but for pics I cannot find.

Can 10,000,000 Boy Scouts be wrong? Have two favorite knives: one is the classic BS pocket knife with some extra tools built in. The other is a Buck "Workman." What makes this knife unusual is the main blade is shaped like a 'claw' and has a ground inward curved blade.

The old BS knives had a fairly high carbon steel blade(s), but God would they take an edge. Same thing with the Workman,' a few light passes with a sharpening stone and you could shave with the thing.

I have a Gerber Gator Fixed, Serrated Edge Knife with Drop Point.
Real Cheap but solid.

Check out the Columbia knife and tool surf and turf folding fillet knife. It'll never leave my vest and is perfect for pan fish on up. It's bomb proof and will run you about $30 give or take.
