Default Corn Beef And Cabbage

Corn Beef and Cabbage

3 pounds corned beef brisket with spice packet
10 small red potatoes
5 carrots, peeled and cut into 3-inch pieces
1 large head cabbage, cut into small wedges

The meat has been in the crock pot now for 7 hours on low..

I will add the other ingredients at 2pm and increase heat to high for supper at 5pm.

Boy oh boy does that ever bring back the memories!

Corned beef and cabbage was the meal my father cooked every New Years Day. His belief was that if you ate something green on that day it would bring prosperity and good luck. (and gas.)

That was our New Years meal also, plus a small pot of crowder peas. We also add 3 small quartered onions at the beginning of cooking the corned beef.
