Montana Ale Works on main street in Bozeman. It's always busy but you can usually find a seat in the bar area. Lots of local beer and everything on the menu is pretty good.

I'll chime in as I have a Flycraft as well as a larger raft. You won't need a trailer as it can easily be secured to the roof of a truck or even a car. Lot of people strap them down on there...

Not on your list and a bit more money but have you looked at the Bozeman Reels? I just put a 3 to 5 on my 5wt and it's awesome. Rod made in Twin Bridges and reel made in Bozeman. Pretty good combo....

I've fished the Salt that time of year. It's stocked for trout but you would have to look up the schedule. I've actually caught pretty decent bass in there as well and seen a lot of carp.
