If you are fit for a short but extreme hike, I'd recommend backpacking into the black canyon of the Gunnison (NP) late June or whenever they crank the valve down- last I checked it was running around...

As said, cudas and shark are plentiful and eager to take a fly, and there are several great flats and channels around Hawks Cay/Duck Key. You'll want a boat or at least a shallow/exposed area to land...
