As the title says, I'm looking for a Simms Headwaters day pack, preferably "gently" used would be great.

I don't know what you want to pay but fishwest has them for 99.00,simms website has them for 109.00,trident has them for 109.00,these are last year models,i bought mine from mrfc for 99.00.
