Where do you live? You should stick that on your info so we know how much rain you'll be dealing with. Since you like nice jackets I recommend the Filson Wading Jacket in wax finish. I use one here and the weather can be a real bugger. Of course the gore tex types will hold out the water longer but then I like the old school stuff and suffer through some dampness now and then. If you are not in the Pacific Northwest then a Filson will do you good. Or, if you're stubborn like me your region won't matter

I would make a poor peacock since I wouldn't be caught dead in a yellow jacket anywhere.

The folks at work give me a hard time because everything I wear is some shade of green or tan.

With regard to blending in, what should one wear when one is fishing a stream in the sagebrush?

I was thinking about something in white to blend in with the sky as someone else mentioned. Even that would probably look dark. Probably best to just stay in that 30 degree blindspot behind the fish or crawl along like an 'ol fence lizard!

i always wear some kind of dull color to something camo but to really know has anyone put on a pair of goggles and laid on your back in a stream or lake and got a view of how things look its pretty amazing...

White or off white has been mentioned as a suitable color. The problem with white as I see it is that lighter colors(especially white) tend to reflect color, darker colors absorb light. Depending on the angle of the sun, and the shade of white being worn....I think you would almost appear dayglow.
