I want to load an older model Medalist 1594 with Rio Deep 7. Can someone tell me how much backing I can put on?

I have a 1494 in front of me right with a DT6 on it
The backing comes up about halfway into the first level of perforations
I'd think that would be about right for your WF7S line too.

If you don't mind going to the trouble, you can wrap your fly line on the spool first, then add backing 'til it's full. Then take it all back off and re-do (taking care not to get the fly line on backwards when using a WF). A bit of a hassle, but accurate.
