Thread: Zigeunersauce over chicken

    Zigeunersauce

    2 tablespoons (30 ml) clarified butter
    1 cup (240 ml) onion, small dice
    2 cups (473 ml) mushrooms, sliced
    3 cups (710 ml) bell peppersóred, orange, yellow; small dice
    1 teaspoon (5 ml/2 cloves) garlic paste
    1 Ĺ tablespoons (23 ml) all-purpose flour
    2 teaspoons (10 ml) Sweet Hungarian Paprika, ground
    2 teaspoons (10 ml) Hot Hungarian Paprika, ground
    2 tablespoons (30 ml) tomato paste
    14 ounces (420 ml) chicken stock
    2 teaspoons (10 ml) honey
    1 lemon, juiced
    Salt and freshly ground black pepper to taste

    Thought about doing this.
    Anyone try this before?
    chicken cubed and slow cooked in sauce.

    not terribly....chicken stock and other ingredients mellow it out.

    German dish also called "Gypsy cutlets'' if memory serves. Not had it over chicken, usually done over Pork or 'Schnitzel.'

    So has anyone cooked this up yet?

    Years ago, but a triple (?) batch for a potluck. The bowl(s) waswere licked clean at the end of the evening.

    Len, those are very delicate spices with a short shelf life. After you've opened the can put the remainder (can and all) in a heavy zip lock (freezer type) bg and put it in your freezer.

    It will last a long time that way.

    am worried this dish will be over the top tasting like peppers.

    You have had it before. Is it strong of peppers?

    Not to worry, as long as you strip out all the seeds, all the 'peppers' are very mild flavored. The green ones will have the most 'umph' (mild heat), the reds/yellows add almost nothing to spice, just colour. Or that's been my experience.
