Default Southern Utah?

How's the fishing in Southern Utah this time of year? I will be taking a family ski vacation to Brian Head, and thought I might try and get away for a day and cast some flies. Any suggestions on waters? Is it even open season this time of year? How about flyshops?

Thanks!!
